Avocado, Candied Bacon and Fried Egg Sandwich

Did we talk about this? I mean, did we ever talk about AVOCADOS?

Let’s pry ourselves away from those gorgeous things I ate in Puerto Galera and talk about avocados for a while.

Avocado is one of my favorite fruits because it’s creamy and it tastes amazingly as dessert combined with lots of ice and condensed milk.

Well, that’s the only thing I do with avocados aside from guacamole from time to time.

But this morning, I was in the mood for trying out something new for breakfast and since the kind people from Dole gave me this super fresh and super beautiful avocados, I decided to include it in my breakfast sandwich.

I know a lot of people already do this but it’s my first time….so indulge me.

Oh yeah, it’s about time I eat those green gem slices together with candied bacon…. Did I just say candied bacon??

Of course! Crispy, sweet, fatty smoked bacon went inside my sandwich… it’s almost uncanny the way the flavors went together. As if I was eating my bacon and egg sandwich for the first time.

This sandwich is made with 100% amazing ingredients. Sliced avocados gave it that velvety texture and creamy taste, the candied bacon gave out a wonderful savory-fatty impression, the tomato slices balanced it out with some tartness and the sunny side-up egg, made sure I am on the right track…mmmmm.

Oh and I ate this while watching Spartacus Season 3 episode 5….

It definitely was a great morning!

Avocado, Candied Bacon and Fried Egg Sandwich

Ingredients
  • wheat bread, or any kind of bread you prefer
  • tomato slices
  • 3 tbsp lite mayonnaise
  • 3 sunny side up eggs
  • Dole avocado slices
for the candied bacon
  • 200 g bacon
  • ¾ cup brown sugar
  • ¼ cup maple syrup
Directions
  1. Candied Bacon: Coat each bacon generously with brown sugar. Drizzle with maple syrup and bake in the oven at 250ºC until it’s wavy and brown and sugar is dissolved and bubbling. It will harden once it’s cooled into room temperature. {You can also do without the maple syrup if you don’t have it}
  2. Toast the bread and spread a thin layer of lite mayonnaise
  3. layer up the candied bacon pieces, tomato slices, fried egg and avocado slices.
  4. Top with another pieces of toasted bread.
  5. Serve with a smile.
